Baked Apples and Granola


  • 6 Organic Apples
  • 2 TBSP of Organic Coconut Oil (I prefer Glass Jars  or look for BPA Free packaging)
  • 2 Tsp Cinnamon
  • 2 Tsp Nutmeg
  • 2 Cups of Gluten Free Quick Oats
  • 1 Cup of Pecan Pieces
  • 1/2 C Maple Syrup


Chop the apples and place in glass 9X13 pan.  Spread Coconut Oil on top of apples.  Sprinkle 1 tsp of Cinnamon and 1 tsp of Nutmeg and stir together.  In separate bowl combine the remaining cinnamon, nutmeg, oats, pecans and maple syrup.  Stir together and top the apples. Bake for 45 – 60 minutes at 350 degrees or until the granola browns.  Serve with a main dish for dinner, as a dessert with Frozen Coconut Ice Cream or breakfast with Vegan Waffles.
