Ingredients:
- 1 bunch of Kale – trimmed and chopped
- 1 head Romaine Lettuce – chopped
- 2 Bosc Pear – Cubed
- 1/2 Bermuda Onion – finely diced
- 1/2 Orange Bell Pepper – diced
- 1/2 Avocado -diced
- 1/2 Carrot – grated
- 1/2 C Walnut Pieces
- 1/2 C Dried Cranberries or Craisens
- 3/4 C Olive Oil (Or Avocado Oil)
- 1/4 C Fresh Lemon Juice
- 2 TBSP Organic Dijon Mustard
- 1 TBSP Salted Minced Garlic
- salt and pepper to taste
Directions:
Mix Olive oil, lemon juice, dijon, garlic, and salt and pepper. Pour dressing over greens and let sit 1 hour before adding other ingredients. Mix kale, romaine, pear, onion, bell pepper, avocado, carrot, walnuts, and cranberries together in large bowl.
