Ingredients:
- 2-3 lb 100 percent Grass fed Bison Roast
- Sea Salt, Pepper, Onion Powder, Optional: Cayenne Pepper
- 2 C Red Wine
- 1 C dried cranberries
- Fresh Green Garlic
- Fresh Thyme OR Rosemary
- 2 TBSP Coconut Oil (I buy Organic in Glass Jars)
Directions:
Rinse Bison Roast and pat dry. Mix dry seasonings and sprinkle on the roast. Set aside. Dice Fresh Green garlic bulb and stem included. You can replace with minced garlic. Pull fresh thyme off stem. Set aside.
Melt coconut oil on browning cycle of Cuisinart Crock Pot. Toss Garlic in coconut oil. Brown both sides of roast 3-4 min on each side. Sprinkle roast with fresh herbs. Pour red wine and dried cranberries on top. Add water to fully immerse roast. Turn cycle down to 200 degrees and cook for 6-8 hours. Roast is ready when the meat falls apart. You can add chopped red potatoes and fresh carrots an hour before serving. Serve with favorite roasted veggie or frozen peas and rice.
