Overnight Raised GF Waffles

Ingredients:

  • 1/2 C Warm Water
  • 1 packet active dry yeast
  • 2 C Goats Milk
  • 4 oz Ghee
  • 1 tsp salt
  • 1 tsp raw sugar (finely ground)
  • 2 C Namaste Flour Blend
  • 2 large eggs (Sub with 2 TBSP Chia Seeds ground and 6 TBSP of Water Slurry)
  • 1/4 tsp baking soda
  • Oil for waffle iron
  • Maple Syrup and Berries for topping

Directions:

The night before: Pour warm water in the bottom of a large bowl.  Sprinkle yeast on top and let it dissolve and foam ever-so-slightly for 15 minutes.  Stir in milk, ghee, salt, sugar, and flour.  Whisk until lumps are smooth.  Cover bowl with plastic wrap and set out on counter for a few hours or overnight.  The next morning, whisk in eggs or substitutes and baking soda until smooth.  Heat waffle iron and coat lightly with oil.  The batter will be thing and will spread out.  Cook and serve warm!  The batter keeps in the fridge or waffles can be frozen and toasted at a later date.
