Pesto Crusted Chicken


  • 1 lb of Chicken Breast
  • 1 C Hummus
  • 1 C Pesto Sauce
  • 1 Large Bag of Spinach
  • 1 Sweet Onion Diced
  • 1 pkg of Organic Grape Tomatoes Halves
  • 1 tsp Paprika


In 9X13 Pan, place fresh spinach in bottom of pan.  Sprinkle diced onions and tomato halves on top of spinach.  Place raw chicken breast on top of veggie mixture.  In separate bowl, mix hummus and pesto sauce together.  Spread the hummus and pesto sauce mixture evenly on top of chicken.  Sprinkle paprika on top of mixture.  Bake at 350 degrees for 45-60 minutes or until chicken is done.  You may serve on top of rice.
