Ingredients:
- 3-4 lb Bison Roast
- Seasonings: Paprika, Salt and Pepper, Cajun Seasoning
- 1 TBSP Coconut Oil
- 3 Large Sweet Onions
- 2 TBSP Minced Garlic
- 2 TBSP Beef Better than Bouillon
- 1 Jar of Medium to Hot Salsa
- Bunch of Cilantro Diced
Directions:
Rinse, pat dry roast, and season both sides to liking. Be liberal with seasonings. Melt coconut oil in crockpot on brown/saute cycle. Brown both sides for 3-4 minutes until nicely browned. Add Onions whole or chopped, minced garlic, beef paste, salsa, cilantro and add water until meat is covered. Slow cook on low for 6-8 hours until meat easily falls apart. Or cook on High for 3-4 hours. Remove meat from crockpot to shred and pour desired juices on top. Serve on fresh hot corn or almond tortillas with mango chutney, guacamole, shredded lettuce, carrots and tomatoes.
