Ingredients:
- 1 C Apple Sauce OR 2 Ripe Bananas (mashed)
- 1/4 C Maple Syrup
- 1 pkg of Organic Strawberries (dice and set aside)
- 1 C Crumbled Raw Pecans
- 1 tsp Salt
- 1 tsp Vanilla
- 1.5 C Almond Milk OR Coconut Milk (Califia is the brand I like. Find a brand that is Carrageenan Free)
- 1 TBSP Lemon Juice
- 2 C Gluten Free Flour (Namaste is a great choice and is Corn, Dairy, Gluten Free. If you use the Namaste Waffle and Pancake Mix it already has Baking Powder and Baking Soda mixed in)
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Cinnamon (or 1-2 drops of Essential Oils Cinnamon)
- 1 tsp Nutmeg (or 1-2 drops of Essential Oils Nutmeg)
Directions:
Mix applesauce OR mashed bananas and add the five ingredients following. Add 1 Cup of your choice of milk with remaining ingredients. Add the remainder of coconut milk (.5 Cup). Place 1/4 C of batter in oil waffle pan for each waffle. Note: vegan waffles take longer to cook than regular waffles. You can store cooked waffles in freezer and toast for a later day or you can serve hot with fresh berries or baked apples.
