Salmon Cakes


  • GF cracker or panko crumbs
  • 2 eggs – You may Substitute with Neat Egg
  • 3 garlic cloves diced fine
  • 1 tbs fresh grated ginger
  • 1/4 c cilantro leaves
  • dash hot sauce
  • salt and white pepper to taste
  • 2 red bell pepper diced fine
  • 3 green onions diced
  • 1.5 lbs Salmon half macerated in food processor and half diced into 1/2 in cubes



Combine all ingredients adding cracker crumbs last until slightly sticky and easy to shape.  Sear in hot pan with fat of choice on two sides then finish in oven for 10 minutes @ 375 degrees.  Served by Kristin Simpson’s Kitchen.
